Chick peas

Chickpeas are mostly cultivated legumes in the globe, and occupy the third place among the most widely consumed.

Chickpea we can distinguish two main varieties:

- Mediterranean, larger and yellowish

- Eastern Europe, smaller and reddish.

The chickpeas are used in the kitchen to prepare appetizers on toasted rustic, to accompany pasta dishes, soups or typical soups; buns, porridge or savory pies are obtained with chickpea flour, finely crushed. With the chickpeas are also prepared casseroles, pies, custards such as' "hummus" of Arab origin, or delicious meatballs (always Arabic) called "Falafel".

Boiled, they can be savored alone, topped with a drizzle of olive oil, or flavored with bay leaves, rosemary, pepper, celery and garlic; are accompanied by very well with fish dishes.
